Modern Italian civilisation has developed over the last 5,000 years, with evidence of rich and highly diversified Italic cultural groups that predate Roman conquest. Sophisitication can even be found in simple dishes. The importance placed on a decent plate of pasta has also enabled the Italians through history to deal with the many complex social issues or problems we experience today.
 
Nicola Orsatti and his family originate from Fara San Martino in Abruzzo Italy, where after the second world war they worked for the now famous DeCecco pasta company. After working for De Cecco, Nicola established a boutique factory in Sora, Lazio (100km east of Rome). In 1955 he was contracted by Nanda to build Australia's first pasta factory in Brisbane.

We've been producing fresh egg pasta since 1958 initially through the Chianti Restaurant created By Frank Orsatti in Elizabeth Street, Surry Hills (Sydney), and then under the brand name Orsatti Food Products, supplying businesses, the public and friends. Orsatti Food Products was conceived by Frank Orsatti in1970, producing a wide range of fresh pasta including ravioli, tortelloni, tagliatelle, lasagna and many other types. Orsatti Food Products were distributed nationally to many delis, retail stores and hospitality businesses until 1992.

Stephen Orsatti started a niche pasta wholesale business in 2009 producing quality egg pasta and ready meals. All pasta is sold to good grocers around Sydney. In 2010 'Orsatti After Pasta' was established and started producing Spezzatino, stewed diced beef in tomato.
